what should one do while demo for health inspector and food technolog people




what should one do while demo for health inspector and food technolog people?
I was told to bring my recipes for evaluation of calorie, fiber, fat etc to the facilities where i have a trial batch at their commercial kitchen and of course there is a health inspector while i demo the cooking. I understand this procedures before my snack is out in the market. Do i have to reveal the lb and ounces of every items i use in making the snack? Can they just use the finished product i demo to them? I understand i have to give them detail of what ingredients which is not a problem but....the how much weight does one ingredient i need to put on to reveal is my concern. Is this how it goes you had to reveal the secret recipe instead of the ingredients only. Also anyone know if i can make sure that who ever present not copy my recipe. Thank you.

Most commercial kitchens , if they are producing the product for you will have a non-disclosure clause in the contract. That means only a few people have the recipe, and there are penalties if they tell anyone. The nutrition information is probably calculated acording to the ingredients, rather than actually analysed from the product. If its calculated they need the recipe, including quantities . Again, the health inspector shouldnt need that , and in the USA is under rules of conduct about discussing what he sees in one place with anyone else. You might be best to have a lawyer for advice. If you are demonstrating a product the recipe should remain confidential to yourself only
